Ingredients
- 2 loup de mer fillets (ready to cook, about 500 g)
- 8 fresh kaffir lime leaves
- 8 fresh bay leaves
- 2 tbsp olive oil (for brushing)
- Salt
- freshly ground pepper
- lemon zest (for serving)

Wash the fish and pat dry. Wash the kaffir lime leaves and bay leaves, pat dry, and cut them in half lengthwise. On each side of the fish skin, make eight shallow cross cuts with a sharp knife at slight angles.

Insert the leaves into the incision lines. Brush the fish with olive oil, season with salt and pepper, and place on the grill grate (or use fold‑out fish grill grates). Grill slowly over low heat for 8–10 minutes per side, turning occasionally. Serve with lemon wedges.
