Ingredients

  • 800 g halibut fillet
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • 2 sprigs Rosemary
  • 4 sprigs Parsley
  • 1 Shallot
  • 1 tsp sea salt
  • Pepper (freshly ground)
  • 50 ml white wine
  • 50 ml fish stock
  • rosemary for garnish

Instructions

    Wash the halibut, pat dry and cut into four portions.

    Peel the shallot and dice it finely. Wash the parsley and shake off excess water. Remove rosemary needles from the stems and finely chop them with the parsley. Mix oil, herbs, lemon zest, lemon juice, shallot cubes, salt and pepper; marinate the halibut fillets in this mixture. Cover and refrigerate for about 10 minutes. Preheat the oven to 175 °C. Arrange the fish fillets side by side in an oven‑proof dish, pour over white wine and stock, cover (or seal with foil) and steam in the preheated oven for about 25 minutes.
