Ingredients

  • 4 handfuls mixed herbs (e.g., blooming oregano, rosemary, thyme)
  • 1 untreated orange
  • 5 garlic cloves
  • 4 saiblings (≈300 g each, ready to cook)
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 4 tbsp fennel seeds
  • 400 g coarse salt

Instructions

    Preheat the oven to 200°C fan.

    Rinse the herbs and shake dry. Wash the orange hot and rub dry. Roughly grate or zest the orange peel. Squeeze out the juice. Peel the garlic and slice thinly.

    Rinse the fish and pat dry. Brush lightly with oil, drizzle with orange juice, season inside and outside with salt and pepper. Stuff with about half the herbs and garlic. Distribute remaining herbs and garlic slices on top of the fish and tie securely with kitchen twine. Sprinkle fennel seeds over them. Spread coarse salt on four small baking trays (or one large) and place the fish on top. Bake in the oven for about 25 minutes, then let cool briefly before serving.
