Coriander Fish

Ingredients
- 4 sea bass fillets
- 3 tsp sesame oil
- 125 ml Vegetable broth
- Salt
- freshly ground pepper
- 1 pinch ground coriander
- 1 lemon
- 200 g mixed sprouts
- 2 tbsp Soy sauce
- 3 tbsp rice wine

Rinse the sea bass fillets under running water and pat dry. Heat sesame oil in a large non-stick pan, add the fillets, and pour in the broth. Cover and cook for 8-10 minutes. Season the fillets with salt, pepper, and ground coriander. Wash the lemon, halve it, squeeze juice from one half, and cut the other half into wedges. Place the sprouts in a sieve, rinse under cold water, drain well.

Remove the fish from the pan and keep warm. Add the sprouts to the pan and deglaze with soy sauce, lemon juice, and rice wine. Rinse fresh coriander, shake dry, and pick off the leaves. Plate the fish together with the sprouts, sprinkle coriander leaves on top, and serve with lemon wedges.
