Ingredients
- 1 haddock (ca. 1 kg, ready to cook)
- 150 g butter
- 500 ml dark beer
- 2 shallots
- 1 bundle parsley
- 1 bundle chervil
- 150 ml fish stock
- Salt
- pepper (from the mill)

Cut the haddock into large pieces. Peel and finely chop the shallots. Heat the butter in a tall pan and sauté the shallots until translucent. Add the haddock and brown it well in the butter. Deglaze with beer. Season with salt and pepper, then cover and simmer over low heat for 10 minutes.

Wash the herbs, shake dry and roughly chop them. Lift the fish pieces from the pan and keep warm. Add the herbs and 150 ml fish stock to the pan, bring briefly to a boil, then remove the pan from the stove. Return the fish pieces, let sit briefly, and serve immediately. Pair with boiled potatoes and a dark beer.
