- 400 g mixed ground meat
- 200 g veal mince
- 1 shallot (finely chopped)
- 1 stale roll
- milk (for soaking)
- 1 egg
- breadcrumbs (as needed)
- 0.5 tsp Salt
- pepper (from the mill)
- clarified butter
- 350 g cocktail tomatoes (number according to number of meatballs)
- 300 g mini mozzarella balls (see number of cocktail tomatoes)
- wooden skewer
- 6 tbsp Olive oil
- 6 tbsp balsamic vinegar
- Salt
- Pepper
- parsley (for garnish)

Sauté shallot in hot clarified butter until translucent. Soak bread in milk, squeeze out excess and combine with shallots, mince, and egg; mix well with salt and pepper. If mixture is too soft, knead in breadcrumbs. Shape small balls with wet hands and fry or deep‑fry in hot clarified butter until golden brown.

Drain on kitchen paper and let cool.

Wash tomatoes, shake parsley dry, and drain mozzarella balls.

Skewer one meatball, a mozzarella ball, and a tomato onto each stick. Arrange on plates, drizzle with olive oil and white balsamic vinegar, garnish with parsley, and serve with seasoning ketchup and olives.
