Lachs-Pescaccio by Spoonsparrow. The fish carpaccio is an unusual starter for low‑carb fans.

Ingredients

  • 400 g very fresh salmon fillet
  • 2 Spring Onions
  • 4 tbsp Lemon juice
  • 1 tsp Honey
  • 2 tsp freshly grated ginger
  • 4 tbsp grape seed oil
  • Sea salt
  • 2 handfuls mixed salad greens
  • 1 tsp Pink peppercorns

Instructions

    Wash the salmon, pat dry and slice into very thin strips. Arrange on plates and chill.

    Trim, wash and cut spring onions into rings. Whisk together lemon juice, honey, ginger and oil; season with sea salt.

  3. 3.

    Rinse and spin dry the salad greens. Place them over the salmon and drizzle with the dressing.

    Sprinkle with crushed pink peppercorns before serving.
