Thai Noodles with Asparagus and Peppered Salmon

Ingredients

  • 350 g salmon fillet
  • 1 EL black peppercorns
  • 4-5 EL salty soy sauce
  • 50 ml coconut milk and mirin each
  • juice of one lime
  • 10 Kaffir lime leaves
  • 500 g white asparagus
  • 200 g Thai rice noodles
  • 4 EL vegetable oil

Instructions

    Cut the salmon fillet into bite-sized pieces. Crush the black pepper with a wide knife or grind it in a mortar. Toss the salmon pieces in the pepper and drizzle with 1 EL salty soy sauce.

    Whisk together coconut milk, mirin, lime juice, and remaining soy sauce. Slice Kaffir lime leaves into very thin strips.

    Peel the asparagus, trim the woody ends, and cut into pieces. Bring plenty of salted water to a boil. Cook the Thai noodles and asparagus pieces together for 4 minutes. Drain on a sieve and set aside.

    Heat vegetable oil in a wok. Fry the salmon cubes for 1 minute. Remove and keep warm. Discard the oil from the wok. Add the asparagus, noodles, and prepared sauce, stirring while heating. Fold in Kaffir lime leaves and salmon cubes. Taste and adjust seasoning with more soy sauce if needed.
