Fresh scallop tartare made with crisp dill and bright orange, served immediately for a light, elegant starter from Spoonsparrow.

Ingredients

  • 8 scallops (fresh, no roe)
  • 1 tbsp chopped dill
  • 1 Shallot
  • 1 untreated orange
  • Sea salt
  • Cayenne pepper
  • 2 tbsp argan oil

    Wash the scallops, pat dry and finely chop them.

    Peel and dice the shallot finely.

    Zest the orange and squeeze out its juice. Combine zest and juice with scallops, dill, shallot, and argan oil. Season with sea salt and cayenne pepper to taste, then serve immediately.
