Ground Meat Loaf

The ground meat loaf from Spoonsparrow is always delicious and offers many combination possibilities!

Ingredients

  • 1 old-fashioned whole wheat roll
  • 1 onion
  • 2 tbsp olive oil
  • 1 Spring onion
  • 0.5 bunch Parsley
  • 750 g minced beef
  • 2 Eggs
  • 50 g whole wheat breadcrumbs
  • 2 tbsp drained green olives (pit removed)
  • Salt
  • black pepper (freshly ground)
  • 1 tbsp Medium-hot mustard

Instructions

    Soak the roll in lukewarm water. Peel and chop the onion. Sauté it in olive oil until translucent, then set aside. Clean, wash, and finely chop the spring onions. Wash the parsley, remove the leaves from stems, and finely chop.

    Squeeze out excess liquid from the soaked roll and mix it with the sautéed onion, chopped spring onions, two-thirds of the parsley, minced beef, eggs, and breadcrumbs. Cut the olives into pieces, add them, season with salt, pepper, and mustard, then knead until a homogeneous mixture forms. Shape the meat mixture into an elongated loaf and place it on a baking sheet lined with parchment paper.

    Bake in a preheated oven at 200 °C (convection: 180 °C; gas: level 3) for 1–1.5 hours. Sprinkle with chopped parsley before serving.
