Ground Beef Tortillas

Ingredients
- 1 onion
- 1 Garlic clove
- 500 g ground beef (beef)
- 2 tbsp olive oil
- 2 tbsp Tomato paste
- 300 ml meat broth
- 2 Tomatoes
- Salt
- pepper (ground)
- 400 g kidney beans (canned)
- 200 g corn kernels (canned)
- 2 red chili peppers
- 3 tbsp pickled jalapeños (sliced)
- 1 Avocado
- 1 tsp Lime juice
- 2 sprigs parsley
- 8 tortilla sheets

Peel and finely chop the onion and garlic. Brown the ground beef in hot oil until crumbly. Add the onions and garlic, cook 2-3 minutes. Stir in tomato paste and deglaze with meat broth. Wash tomatoes, cut off stems, dice, and add to the beef; season with salt and pepper. Simmer covered for about 30 minutes, stirring occasionally. Rinse beans and corn in a sieve, drain well. Add to the chili mixture and cook together another ~15 minutes. If needed, add more broth and adjust seasoning.

Wash, trim, and slice chili peppers into rings. Mix with drained jalapeños. Peel avocado, halve, remove pit, cut halves into thin slices, drizzle with lime juice. Rinse parsley, shake dry, and tear into pieces.

Warm tortilla sheets briefly in a hot pan or oven, then fill each with the beef mixture, chili mix, parsley, and avocado slices; fold and serve.
