Ingredients
- 4 chicken breast fillets (cut into 2 cm wide strips)
- 2 stalks leeks (cleaned and sliced into rings)
- 1 red bell pepper (de-seeded and cut into fine strips)
- 2 Garlic cloves
- 2 tsp sugar
- 3 tbsp water
- 1 tsp freshly grated ginger
- 4 tbsp oil
- 2 star anise
- 200 ml chicken broth
- 2 tbsp rice wine
- Salt
- pepper (ground)
- 2 tbsp peanuts

Caramelize the sugar and water in a hot wok until bright yellow syrupy, then brush the chicken strips with it. Sear the meat in 2 tbsp oil in the wok, remove and keep warm.

Sauté the bell pepper for about 2 minutes in the wok, add leeks, pressed garlic, and ginger, briefly stir-fry, then add the meat, broth, peanuts, and star anise; cook while stirring for about 4 minutes. Remove the star anise and season with rice wine, salt, and pepper.
