Ingredients

  • 700 g minced beef
  • 2 whole grain rolls (from yesterday)
  • 2 onions
  • 1 Garlic clove
  • 1 Tbsp clarified butter
  • 2 Eggs
  • 1 tbsp thyme
  • 2 tbsp capers
  • 1 bunch parsley
  • fat for the pan
  • 1 bunch parsley
  • 350 g tomatoes
  • 150 g Gouda cheese (sliced)
  • 2 bunch basil
  • salt and pepper

Instructions

    Peel and finely chop onions and garlic, sauté in clarified butter. Wash and finely chop parsley and 1 bunch basil, briefly sauté with them. Soak the rolls in warm water, squeeze out excess liquid and mix with minced beef, onions, eggs, capers and seasonings. Grease a 24 cm tart pan, spread the meat mixture evenly, smooth it out and bake at 200°C for 20 minutes.

    Heat tomatoes over boiling water, cool them, peel, halve, remove seeds. Tear basil leaves into small pieces. Arrange tomato halves on top of the meat cake, cover with cheese slices and half the basil, season with salt and pepper, then bake again at 200°C for 15 minutes.

    Before serving garnish with remaining basil leaves.
