Meatloaf with Vegetables

Ingredients

  • 1 old-fashioned roll
  • 2 Spring Onions
  • 1 tbsp Olive Oil
  • 2 carrots
  • 200 g peas (fresh split)
  • Salt
  • olive oil (for baking dish)
  • 800 g mixed ground meat
  • 1 egg
  • pepper (ground)

Instructions

    Soak the roll in lukewarm water. Wash, trim and slice the spring onions into rings. Sauté in hot olive oil until translucent, then let cool. Peel and dice the carrots. Blanch carrots and peas in salted water for about 2 minutes, then shock in cold water and drain.

    Preheat oven to 180°C (350°F) with upper and lower heat. Grease a baking dish with olive oil.

    Combine ground meat with the drained roll, egg, and vegetables. Season with salt and pepper.

    Fill the mixture into the dish and cover with foil. Bake for about 50 minutes.

    Serve in slices.
