Grilled Zucchini Shrimp Skewers

Ingredients

  • 500 g frozen peeled shrimp
  • 1 Zucchini
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • Sea salt
  • white pepper (freshly ground)
  • 1 untreated lemon
  • wooden skewers
  • oil for grill rack

Instructions

    Peel and press the garlic, then mix with the olive oil.

    Thaw the shrimp. Using a small sharp knife, make a shallow cut along the back of each shrimp to expose the black vein; carefully remove it with the tip of the knife. Rinse the shrimp and pat dry. Wash the zucchini and slice crosswise into thin ribbons.

    Thread shrimp and zucchini alternately onto the wooden skewers. Brush the skewers with the garlic oil and season with salt and pepper.

    Oil the grill rack, then grill the skewers over medium heat for about 5 minutes per side, brushing with garlic oil several times during cooking.

    Serve the grilled zucchini shrimp skewers with lemon wedges.
