Ingredients
- 350 g tuna (whole piece)
- 1 tsp lemon juice
- Salt
- Pepper
- 2 tbsp plant oil
- 250 g small artichokes (in oil)
- 6 Cherry tomatoes
- 200 g lamb's lettuce
- 200 g arugula
- 0.25 zucchini
- 2 tbsp pistachio nuts
- 2 egg yolks
- 0.125 l plant oil
- 1 tsp lemon juice
- 1 sour cucumber

Wash the fish, pat dry, rub with salt and pepper, drizzle with lemon juice. Grill all around for 7 minutes so the inside remains raw.

Clean, wash, and dry the salad greens. Slice zucchini into thin sticks, halve tomatoes and artichokes. Whisk egg yolks with salt and pepper, drizzle in oil until a thick sauce forms. Dice cucumber finely, season with lemon juice. Slice fish, place two slices per plate, arrange with salad, tomatoes, zucchini, and artichokes, pour sauce over. Roughly chop pistachios and sprinkle on top.
