Ingredients
- 350 g colorful spiral pasta
- Salt
- 150 g mixed leafy greens (e.g., radicchio, endives, iceberg lettuce)
- 200 g Cherry tomatoes
- 150 g black olives (pitted)
- 2 Spring Onions
- 2 balls mozzarella (125 g each)
- 4 tbsp olive oil
- 2 tbsp white balsamic vinegar
- 2 tbsp lemon juice
- 0.5 tsp Dijon mustard
- pepper (ground)
- 1 tsp dried herbs of Provence

Cook the pasta in boiling salted water until al dente. Drain, rinse with cold water, and let it drain well.

Wash, trim, and tear the greens into bite‑sized pieces. Wash and quarter the tomatoes. Drain and halve the olives. Wash, trim, and slice the spring onions into thin rings. Drain the mozzarella and cut into cubes or strips. Whisk the oil with vinegar, lemon juice, mustard, salt, and pepper in a salad bowl. Add the vegetables, pasta, and mozzarella, then toss with the dressing. Taste and serve sprinkled with extra pepper.
