Ingredients

  • 400 g celery root
  • Salt
  • 3 apples
  • 3 tbsp Lemon juice
  • 300 g low-fat yogurt
  • Pepper
  • 1 pinch sugar
  • 2 sprigs parsley (or celery greens)
  • croutons (for serving)

Instructions

    Peel, wash and slice the celery into rounds. Boil in lightly salted water for about 3 minutes, drain, rinse with cold water and let dry. Peel the apples, quarter them and remove cores. Cut quarters into thin sticks. Drizzle with lemon juice. Slice celery rounds into sticks and mix with apple sticks. Wash parsley (or celery greens), pat dry and cut into thin strips. Season yogurt with salt, pepper and sugar, add to the apple‑celery mixture, stir well and taste.

    Serve in bowls, garnish with parsley (or celery greens) and serve with croutons.
