Noodle Salad with Beans, Chili and Avocado

Ingredients

  • 150 g spiral noodles
  • 1 ripe Avocado
  • 2 tbsp lemon juice
  • 150 g Sour cream
  • 1 Garlic clove
  • 1 red chili pepper
  • coriander (a few leaves)
  • 1 bunch spring onions
  • 1 small can corn kernels
  • 250 g kidney beans (1 can)

Instructions

    Cook the noodles in salted water until al dente, then drain and rinse with cold water.

    Halve the avocado, remove the pit, scoop out the flesh and blend it with lemon juice, pressed garlic, sour cream, salt and pepper to taste.

    Slice the chili pepper into thin rings and discard the seeds.

    Wash, trim and slice the spring onions into diagonal rings. Drain the corn and beans in a sieve and let them drain.

    Combine all salad ingredients with the avocado dressing, sprinkle with chili rings and coriander, then serve.
