Ingredients

  • 750 g spinach
  • 1 Garlic clove
  • 1 Shallot
  • 2 tbsp olive oil
  • 1 tbsp Raisins
  • Salt
  • Pepper (from the grinder)
  • nutmeg
  • 12 sardines
  • 1 bunch herbs (e.g., thyme, rosemary, parsley)
  • oil (for brushing)
  • 1 lemon

Instructions

    Wash and rinse the spinach, then place it in a pot with a splash of water and let it wilt over high heat. Drain in a colander and chop. Peel and finely dice the garlic and shallot. Sauté both in oil, add raisins, then stir in the spinach, seasoning with salt, pepper, and nutmeg.

    Wash the sardines and pat them dry. Insert 1–2 sprigs of herbs into each fish's cavity. Season with salt and pepper, brush lightly with oil, and grill each side for about 3 minutes. Slice the lemon into wedges.
