Shrimp Skewers with Mango

Ingredients
- 6 wooden skewers
- 2 organic oranges (juice)
- 3 tbsp Lime juice
- 1 clove garlic
- 2 tsp freshly grated ginger
- 2 tbsp olive oil
- 0.5 tsp ground cumin
- Salt
- 1 tsp cane sugar
- Cayenne pepper
- 1 ripe Mango
- 3 tbsp white rum
- 1 white onion
- 12 large shrimp (peeled, ready to cook)

Peel and finely chop the garlic and shallot. In a small pot combine citrus juice with olive oil, garlic, shallot, ginger, cumin and a pinch of salt; let it infuse briefly, then bring to a boil with sugar and a touch of cayenne pepper and simmer for about 5 minutes.

Peel the mango and cut into thick wedges from the core. Blend half the fruit flesh with rum, gently warm the mango sauce and keep it warm.

Cut the remaining mango flesh into 12 cubes. Peel the white onion and slice lengthwise into 6 strips.

Thread a mango cube, shrimp and onion strip onto each wooden skewer. Grill over high heat for 3 minutes on each side until the shrimp are no longer translucent.

During the final grill time brush the skewers with generous amounts of orange sauce and grill briefly again until the glaze has taken color. Serve the shrimp skewers with warm mango sauce.
