- 24 shrimp
- 2 white onions
- 8 shiitake mushrooms
- 1/2 red, yellow and green bell pepper each
- fresh rosemary
- 4 small spring onions
- olive oil

Peel and devein the shrimp, rinse and pat dry. Peel the onions and cut into eighths. Wash and pat dry the mushrooms. Remove seeds from the bell peppers, wash and pat dry, then cut into bite‑size pieces. Trim and halve the spring onions.

Arrange the vegetables, shrimp, and mushrooms alternately on skewers, inserting fresh rosemary between them. Brush with olive oil and grill for 8–10 minutes.
