Grilled Salmon Wrapped in Foil

- 800 g salmon fillet (with skin)
- 4 Spring Onions
- 1 Lime
- 2 Garlic cloves
- 4 tbsp olive oil
- coarse Sea salt
- Pepper (freshly ground)
- 5 tbsp dry white wine

Wash the salmon, pat dry and remove any remaining pin bones. Wash and trim the spring onions, then cut into rings. Wash the lime; slice half into rounds and juice the other half. Peel the garlic and roughly chop.

Lay a large piece of aluminum foil (about twice the length and three times the width of the fish). Brush the center with some oil and place the salmon skin-side down on it. Season with salt, pepper, drizzle olive oil and lime juice over it, then top with lime slices and garlic. Sprinkle half of the spring onions over the top. Fold up the edges of the foil slightly and pour in the wine. Tuck the foil over the fish and seal tightly.

Place the package on a hot grill and cook slowly for about 30 minutes. Occasionally open the foil briefly to check if the salmon is done. Before serving, carefully open the packet and sprinkle with the remaining spring onions.
