Cold Vegetable Salad

Cold vegetable salad by Spoonsparrow: light summer treat, perfect for the next grill night!

Ingredients

  • mixed salad leaves
  • 1 chicory
  • 2 Tomatoes
  • 1 small cucumber
  • 3 Carrots
  • 150 g blue grapes
  • 100 g walnut kernels
  • 50 g dark raisins
  • 150 g Edam cheese
  • 200 g fresh mushrooms (seasonal)
  • 1 handful fresh sprouts
  • 3 tbsp chopped mixed herbs (tarragon, thyme, basil, marjoram)
  • Salt
  • pepper (ground)
  • olive oil
  • white wine vinegar

Instructions

    Wash and trim the salad. Split chicory into leaves. Wash tomatoes and cut into small pieces. Wash cucumber and slice. Peel carrots and grate. Wash grapes and remove stems.

    Cut Edam cheese into cubes.

    Clean mushrooms, cube them and quickly sauté in 2 tbsp oil until browned, season with salt, pepper and herbs, let cool slightly then mix with the cheese.

    Arrange all salad ingredients decoratively on a platter or plates, placing the cheese-mushroom mixture in the center. Serve with olive oil and vinegar.
