Ingredients

  • 200 g beans
  • 8 cooked potatoes (from the day before)
  • 50 ml Vegetable broth
  • 1 Garlic clove
  • 4 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 0.33 bunch chives
  • 2 limes
  • 4 salmon fillets (200 g each)
  • 1 tbsp butter
  • Sea salt
  • Pepper
  • 4 tbsp sour cream horseradish

Instructions

    Wash, trim and cook the beans in plenty of water for 6-8 minutes. Peel and slice the potatoes. Bring the broth to a boil and press in the garlic. Add the vinegar and oil and mix in the potato slices. Cut the chives into small rings except for a few stems. Mix the rings in and let the salad sit slightly. Halve the limes and grill them cut side down. Grill the salmon fillets on both sides.

    Warm the beans in butter and arrange with the salmon fillets on plates. Add the salad, lime halves and horseradish to the plates and garnish with chives before serving.
