Straw Steak with Grapes and Porcini

Ingredients

  • 350 g porcini mushrooms
  • 2 shallots
  • 24 grapes
  • 4 straw steaks (about 160 g each)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp sunflower oil
  • 25 g butter
  • 40 ml Calvados
  • 150 ml Heavy Cream
  • 1 tbsp chopped parsley
  • smooth parsley for garnish
  • coarse Sea salt

Instructions

    Preheat the oven to 200°C fan. Clean and finely chop the mushrooms, peel and dice the shallots. Wash the grapes, halve them, remove seeds and peel off the skins.

    Wash the steaks, pat dry, season with salt and pepper. Sear in hot oil on all sides and then place in the oven for about 15 minutes.

    Sauté the shallots in butter until translucent, add the porcini mushrooms, season, and brown for about 5 minutes while turning occasionally.

    Deglaze with Calvados and cream, simmer for about 5 minutes, then add grapes and chopped parsley. Cook for another 1-2 minutes, adjust seasoning with salt and pepper. Plate the mushrooms with sauce and grapes, nestle the steaks on top, garnish with smooth parsley and sprinkle coarse sea salt.
