Grilled Salmon with Fruity Sauce

Ingredients
- 2 egg yolks
- 2 tbsp dry white wine
- 150 g clarified butter
- Salt
- Pepper (freshly ground)
- 1 splash Lemon juice
- 200 g strawberries
- 200 g rhubarb
- 2 tbsp Soy sauce
- 1 tsp sugar
- 4 salmon fillets (about 150 g each)
- 2 tbsp lemon juice
- Salt
- Pepper (freshly ground)
- chervil (for garnish)
Instructions

Whisk the egg yolks with the white wine over a hot (not boiling) water bath until creamy. Reduce heat and pour in the clarified butter in a thin stream while whisking continuously. Season the sauce with salt, pepper, and lemon juice.

Wash, clean, and peel the strawberries and rhubarb. Halve the strawberries and cut the rhubarb into pieces. Blend about half of the strawberries with soy sauce. Cook the remaining strawberries and rhubarb in approximately 100 ml water with sugar for about 7 minutes, stirring in the blended strawberries.

Rinse the salmon, pat dry, and drizzle with lemon juice. Season with salt and pepper, then grill each side on a hot grill for about 3 minutes.

Spread the sauce onto warmed plates and place the salmon on top. Pour the strawberry-rhubarb sauce over the salmon and garnish with chervil.
