Grilled Potato and Bacon Skewers

The potato-bacon skewers from the grill of Spoonsparrow bring color to the grill buffet!
Ingredients
- 1.5 kg cooked, small new potatoes
- 2 onions
- 150 g turkey bacon (sliced)
- 4 tbsp rapeseed oil
- Salt
- black pepper (freshly ground)
- 2 Spring Onions
- 2 tbsp lemon juice

Halve the potatoes. Peel and quarter the onions, then cut each quarter into slices. Alternate threading the potatoes, onion slices, and folded bacon strips onto long wooden skewers (preferably soaked beforehand). Brush with oil, season with salt and pepper, and grill over high heat, turning regularly for about 15 minutes until cooked.

Wash, trim, and slice the spring onions into rings. Mix with the remaining oil, lemon juice, salt, and pepper to make a vinaigrette.

Remove the skewers from the grill and drizzle them with the spring onion vinaigrette before serving.
