We love hummus! Try making creamy hummus à la Spoonsparrow.
Ingredients
- 250 g dried chickpeas
- 3 Garlic cloves
- Salt
- 50 g tahini (jar)
- 1 untreated lemon (juice)
- 0.25 tsp cumin
- 4 tbsp olive oil
- chopped coriander leaves (for garnish)

Soak chickpeas overnight, then drain and simmer in fresh water for about 40 minutes until tender. Drain into a colander and rinse under cold water. Puree the chickpeas with an immersion blender.

Peel, chop, and finely grate the garlic cloves. Add to the puree along with tahini, lemon juice, cumin, and olive oil; mix well. Season with salt and cover for 30 minutes in the refrigerator.

Serve hummus garnished with olive oil and coriander leaves alongside toasted bread.
