Preheat the oven to 200°C.

Season the pork ribs with salt and pepper, place them in a roasting pan, pour one cup of hot water over them, and put them in the oven. After about 30 minutes reduce the heat to 160°C and cook covered for another 30 minutes, then uncovered for an additional 30 minutes. Occasionally add more hot water and spoon the pan juices over the meat. Finally brush the ribs with saltwater and roast at 220°C until crispy.

Peel, wash, and cut the potatoes into small pieces; simmer in salted water covered for about 25 minutes until tender. Drain the potatoes and let them steam off slightly, then add butter and cream and mash with a potato masher to make a smooth purée. Season with salt and pepper. Plate the pork ribs with the mashed potatoes and sauce. Garnish with strips of blanched spring onions if desired.
