Ingredients

  • 1.5 kg pork rind roast (cured)
  • 4 tbsp Honey
  • 4 tbsp Lemon juice
  • 0.5 tsp ground ginger
  • a pinch cayenne pepper
  • 1 tbsp oil
  • 200 ml meat stock
  • 150 g small carrots
  • 150 g green asparagus
  • Salt

Instructions

    Wash the meat, pat dry and score the rind in a diamond pattern with a sharp knife or electric knife.

    Whisk honey, lemon juice, ginger and cayenne into a glaze.

    Heat oil in a roasting pan and sear the meat all around. Pour in the stock and brush the roast with glaze.

    Place the pan in a preheated oven at 200 °C (direct heat) and roast for about 90 minutes, glazing repeatedly. While the meat cooks, clean the vegetables and blanch them in boiling salted water until al dente. Add them to the pan about 10 minutes before the end of cooking and glaze again.
