Grilled Pepper and Arugula Salad

Ingredients

  • 4 small red bell peppers
  • 4 slices white bread
  • 0.5 bunch arugula
  • 4 tbsp parmesan shavings
  • Salt
  • Pepper (freshly ground)
  • 1 egg yolk (from fresh eggs)
  • 60 ml olive oil
  • 1 Garlic clove
  • 20 g Dijon mustard
  • 1.5 tbsp white wine vinegar
  • 125 ml heavy cream
  • a pinch cayenne pepper

Instructions

    Wash peppers, pat dry, halve and core them. Grill under a hot oven grill from all sides until the skin blisters and the pepper starts to soften, then remove. If desired, peel off the skin.

    Rinse arugula and spin dry. Cut white bread into small cubes. Heat 3 tbsp olive oil in a pan and fry the bread cubes until golden brown on all sides. Season with salt and pepper. Set aside.

    For the dressing whisk egg yolk and olive oil into a mayonnaise consistency. Squeeze garlic clove and add its juice along with mustard, vinegar, cream and cayenne pepper to the mayonnaise and stir with a whisk.

    Arrange peppers with arugula, croutons and parmesan shavings on plates and drizzle with dressing before serving.
