Ingredients

  • 4 thin stalks of leek
  • Salt
  • 3 tbsp Olive oil (30 g)
  • 1 tbsp butter
  • 1 tbsp breadcrumbs
  • 1 tbsp sesame seeds (15 g)
  • 1 pinch nutmeg
  • Pepper
  • a pinch cumin
  • a pinch coriander

Instructions

    Clean and wash the leeks, then cut each stalk crosswise. Blanch in boiling salted water for 1-2 minutes, shock in cold water and drain thoroughly.

    Pat the stalks dry, brush with oil and lightly brown all sides on the grill. In a small pan melt the butter, toast the breadcrumbs and sesame seeds over medium heat, seasoning with salt, nutmeg, coriander, and cumin.

    Before serving, spread the toasted mixture over the grilled leeks and serve warm.
