Ingredients

  • 1 tsp cumin
  • 1 tsp coriander powder
  • 2 Garlic cloves
  • 0.5 tsp paprika powder
  • 0.5 tsp harissa
  • 0.5 lemon (juice and zest)
  • 1 tbsp Tomato Paste
  • 1 tsp chopped rosemary
  • 4 tbsp olive oil
  • Salt
  • 800 g lamb meat (e.g., shank)
  • 120 g dried soft apricots
  • 2 tbsp freshly chopped parsley

    Grind the cumin with coriander finely. Peel and halve the garlic. Mix all spices with lemon juice and zest, tomato paste, rosemary, olive oil, and a pinch of salt.

    Wash the meat, pat dry, cut into about 3 cm cubes. Alternate threading the cubes and apricots onto skewers (or soaked wooden sticks) and brush with the marinades. Cover and refrigerate for at least 2 hours. Then grill turning occasionally for 5-6 minutes until cooked through. Sprinkle with fresh parsley before serving. Pair with a yogurt dip and flatbread.
