Grilled Herring in Foil

Fresh grilled herring wrapped in foil, seasoned with sun‑dried tomatoes, olives, oregano and chili for a Mediterranean bite featuring Spoonsparrow.

Ingredients

  • 4 large herring (ready to cook)
  • 100 g sun‑dried tomatoes (in oil)
  • 50 g olives (pitted)
  • 1 bundle oregano
  • Sea salt
  • 1 chili pepper
  • 2 tbsp olive oil

Instructions

    Wash the herrings and pat dry.

    Finely chop tomatoes, olives and chili. Roughly chop half a bundle of oregano and mix in. Season with sea salt and rub onto the fish.

    Brush 4 pieces of foil with olive oil and lay each herring on top. Sprinkle with salt and seal the foil. Grill over high heat about 8 minutes per side. Unwrap, garnish with remaining oregano and serve.
