Ingredients

  • 1 green pepperoni
  • 600 g ripe tomatoes
  • 2 red onions
  • 6 tbsp Olive oil
  • 4 tbsp white wine vinegar
  • 1 pinch sugar
  • Salt
  • Pepper (freshly ground)
  • 500 g halloumi cheese
  • olive oil (for brushing)
  • 2 tbsp freshly chopped parsley

Instructions

    Wash the pepperonis and cut them into rings. Wash the tomatoes, remove the stem ends, and slice them into wedges. Peel the onions and cut them into rings. Whisk together the olive oil and vinegar, then season with sugar, salt, and pepper. Toss the onions and tomatoes in the dressing and divide among four bowls. Sprinkle the pepperonis over the salads.

    Cut the halloumi into approximately 1.5 cm cubes, brush with olive oil, sprinkle with parsley, and grill on a hot grill for 6–8 minutes until golden brown, turning occasionally.
