Stuffed Bell Pepper Turkey Roast

Summer light and full of healthy ingredients brings the stuffed bell pepper turkey roast to the table!

Ingredients

  • 3 bell peppers (red, yellow)
  • 4 Spring Onions
  • 1 small onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 1 tbsp coconut flakes
  • 1 egg
  • 4 tbsp soy sauce
  • Pepper
  • 1 kg turkey breast fillet
  • Salt
  • 2 tbsp white sesame seeds
  • 2 tbsp black sesame seeds
  • 1 small savoy cabbage
  • 2 tbsp Vegetable oil
  • 0.5 dried chili pepper
  • 1 tbsp coconut flakes
  • 2 tbsp Soy sauce

Instructions

    Prepare all ingredients for further processing. Wash the peppers, halve them, remove seeds and white membranes, and dice finely. Wash and trim the spring onions and cut into rings.

    Peel and finely dice the onion and garlic. Together with the chopped vegetables, sauté in 2 tbsp hot oil for about 1 minute. Sprinkle coconut flakes on top. Beat the egg and stir it into the mixture. Season with 1-2 tbsp soy sauce and pepper. Remove from heat.

    Rinse the turkey breast and pat dry. Place the meat on a sheet of plastic wrap on a cutting board and make deep longitudinal cuts (butterfly cut), removing any tendons if necessary. Make a horizontal deep cut almost to the edge in the left half, then open it. Repeat with the right half. Lay another piece of plastic wrap over it and gently flatten with a meat mallet. Season the inside with salt and pepper.

    Preheat the oven to 140°C (Oven + fan).

    Spread the pepper filling on the meat, leaving the edges free. Roll up, fold in the sides, and place seam side down on the board. Wrap tightly with kitchen twine and tie firmly. Secure the ends with small pins.

    Place the turkey roast on a baking tray.

    Brush all around with soy sauce and sprinkle white and black sesame seeds. Bake in the preheated oven for about 1.5 hours, brushing with soy sauce occasionally.

    Meanwhile prepare the savoy cabbage. Remove outer leaves and trim the stem slightly. Cut the cabbage into eighths and brown in a non-stick pan over hot oil, turning for about 5 minutes. Add the roughly crumbled dried chili pepper, sprinkle coconut flakes, pour soy sauce, and simmer gently for another 10-15 minutes until tender.

    Remove the stuffed bell pepper turkey roast from the oven, remove twine and pins, and slice into pieces. Serve with the savoy cabbage on plates.
