Grilled Half Bell Peppers with Sheep Cheese Tomato Filling

Try the delicious grilled half bell peppers stuffed with sheep cheese tomato filling from Spoonsparrow!

Ingredients

  • 4 bell pepper halves (red and yellow)
  • 16 cocktail tomatoes (red and yellow)
  • 150 g sheep cheese
  • 1 bunch Basil
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt
  • black pepper (freshly ground)
  • 1 lemon

Instructions

    Halve the peppers lengthwise, remove seeds, wash, and pat dry. Dice the sheep cheese.

    Wash and halve the cocktail tomatoes.

    Wash the basil, shake off excess water, and roughly chop the leaves.

    Combine sheep cheese, tomatoes, and basil; season with salt and pepper, then stir in olive oil and lemon juice. Fill the pepper halves, tucking them slightly together with toothpicks. Grill on a hot grill (or on foil) for about 5 minutes.

    Serve garnished with lemon wedges.
