Ingredients

  • 4 yellow bell peppers
  • 2 tsp Olive oil
  • 1 onion
  • 100 g unsalted cashew nuts
  • 200 g mushrooms
  • 200 g sheep cheese
  • 2 tsp soy sauce
  • 0.5 bunch chopped parsley
  • Salt
  • Pepper

Instructions

    Halve the peppers, wash them, and remove seeds and white membranes. Peel the onion and sauté it in oil.

    Clean the mushrooms, halve them, add them with the nuts to the pan and fry for 5 minutes.

    Cut the cheese into cubes, mix in the parsley, season with soy sauce, salt, and pepper, then fill the pepper halves with the mixture. Place on a greased baking sheet and bake at 190 °C (top/bottom heat) for about 20 minutes.
