Creole Fish with Tomato Salsa

Ingredients
- 600 g halibut fillet (pre‑cooked)
- 2 Garlic cloves
- 4 tomatoes
- 2 Spring Onions
- 1 tbsp chopped coriander
- Juice of two limes
- 1 tsp Raw Sugar
- olive oil
- Salt
- ground pepper
Instructions

Wash the fish, pat dry and cut into 8 roughly equal pieces. Drizzle with lime juice and let marinate in the refrigerator for about 20 minutes.

Peel and finely chop the garlic.

Heat water, pour over tomatoes to blanch, then peel, quarter, seed and dice them.

Wash, trim and slice spring onions diagonally into rings.

Combine garlic, tomato cubes, spring onion rings, coriander, 2 tbsp oil, juice of the second lime and sugar; season with salt and pepper.

Pat fish dry and fry in 3 tbsp hot oil for about 2–3 minutes per side. Season with salt and pepper and arrange on plates. Spoon tomato salsa over the fish and serve.
