Stuffed Kohlrabi with Ground Meat

Ingredients

  • 4 large kohlrabi
  • Salt
  • 1 small carrot
  • 1 red chili pepper
  • 1 egg yolk
  • 1 tbsp freshly chopped parsley
  • a pinch dried thyme
  • 250 g ground meat (mixed)
  • pepper (ground)
  • 4 tbsp grated cheese (e.g. Emmental)
  • chili peppers
  • parsley

Instructions

    Preheat the oven to 180°C with fan and top heat.

    Peel the kohlrabi, trim the bottom for better stability, cut off a lid, and hollow out the kohlrabi using a melon baller, leaving about a 1 cm rim. Reserve the scooped-out flesh for another use. Parboil the kohlrabi in salted water for about 10 minutes, then rinse and pat dry. Peel and finely dice the carrot. Wash, halve, deseed, and finely chop the chili pepper. Mix the carrot, egg yolk, parsley, thyme, and ground meat together. Season with salt and pepper, fill the kohlrabi cavities, place on a baking sheet lined with parchment paper, sprinkle with cheese, and bake for about 20 minutes.
