Spiced Cauliflower

Ingredients

  • 1.2 kg large cauliflower (1 large head)
  • Salt
  • 2 cloves garlic
  • 1 piece ginger (2–3 cm)
  • 3 tsp Curry powder
  • 1 tsp turmeric powder
  • Pepper (freshly ground)
  • 2 tbsp ghee (or clarified butter)
  • 10 g coriander (0.5 bunch)
  • 1 tbsp Lemon Juice

Instructions

    Clean, wash and cut cauliflower into small florets. Blanch florets in boiling salted water for 3–4 minutes, drain and shock with cold water.

    Peel garlic and ginger and finely chop both. Mix with curry powder, turmeric powder, salt and pepper. Toss the spice mixture into the cauliflower. Heat ghee in a pan, add cauliflower and sauté for 2–3 minutes over medium heat until golden brown.

    Wash coriander, shake dry, pluck leaves and roughly chop. Spread spiced cauliflower on a plate, drizzle with lemon juice, sprinkle chopped coriander and serve.
