Grilled Cod and Vegetable Skewers

Ingredients

  • 600 g cod fillet
  • 2 cloves garlic
  • 3 tbsp Lemon juice
  • 5 tbsp olive oil
  • 2 small zucchini
  • 1 yellow bell pepper
  • 2 red onions
  • Salt
  • ground pepper
  • 300 g yogurt
  • 1 tbsp Lemon Juice
  • 2 tbsp heavy cream
  • 2 tbsp chopped mixed herbs

Instructions

    Wash the fish, pat dry and cut into bite‑size cubes. Peel the garlic and press through a press, then mix with lemon juice and 3 tbsp oil. Toss the fish pieces in the mixture and marinate for about 20 minutes.

    Wash and trim the zucchini, slicing into finger‑thick rounds. Clean the bell pepper, remove seeds and white membranes, then cut into large cubes. Peel the onions and split them lengthwise into wedges. Skewer the vegetables and fish alternately on eight sticks, seasoning with salt and pepper. Heat remaining oil in a pan and brown the skewers all around for 5–7 minutes.

    Slice chives into ribbons and whisk together with yogurt, cream and lemon juice. Season with salt and pepper to taste and serve with white bread alongside the skewers.
