Ingredients

  • 1 onion
  • 1 Garlic clove
  • 1 tbsp plant oil
  • 150 ml dry white wine
  • 100 g Gorgonzola cheese
  • 100 g Parmesan cheese
  • 1 tsp Cornstarch
  • 100 ml Vegetable broth
  • 100 ml heavy cream
  • 500 g green tortellini
  • 2 Tomatoes

Instructions

    Dice the onion and garlic finely.

    Sauté both in hot oil in a pot until translucent, then deglaze with wine.

    Cube the cheeses and stir them into the sauce.

    Whisk cornstarch with broth and cream together.

    Pour the mixture into the cheese sauce while stirring, simmering for about 5 minutes until thickened; season with salt and pepper and add more broth if needed.

    Cook the tortellini in salted water according to package instructions.

    Wash, quarter, seed, and dice the tomatoes.

    Drain the tortellini and plate it; pour the sauce over it and garnish with tomato cubes.
