Green Salad with Grapefruit and Orange Fillets

Ingredients
- 1 head lettuce (or 400 g mixed greens as desired)
- 0.5 bunch Chives
- 1 orange
- 1 small Grapefruit
- 2 tbsp balsamic vinegar
- 0.5 tsp Salt
- 1 tsp sugar
- 1 tsp Mustard
- pepper (ground)
- 3 tbsp olive oil
- 2 tbsp roasted pine nuts

Separate the salad into individual leaves, wash and dry them. Wash the chives, shake off excess water and cut the stems into about 5 cm pieces. Filet the orange: using a knife, cut away the peel so that the white pith is completely removed.

Using a knife, cut the fruit segments at an angle to release juice, catching it in a bowl. Squeeze out any remaining pulp from the remaining skins and catch that juice as well. Filet the grapefruit similarly, but set aside its juice for other uses; it will not be needed here.

Whisk the orange juice with vinegar, salt, sugar, mustard, and pepper, then whisk in the oil until a thick dressing forms. Tear the salad leaves into bite-sized pieces and toss them with the dressing. Serve portions in salad bowls, top with orange and grapefruit fillets, sprinkle pine nuts, and garnish with chives.
