Green Pasta with Blue Cheese

Ingredients

  • 500 g green tagliatelle
  • Salt
  • 100 g Gorgonzola
  • 2 Garlic cloves
  • 2 tbsp butter
  • 1 tbsp flour
  • 150 ml whipping cream
  • 100 ml milk
  • 80 g freshly grated Parmesan
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)

Instructions

    Cook the pasta in salted water until al dente. Dice the Gorgonzola into small cubes. Peel and finely chop the garlic. Sauté in hot butter. Dust with flour, add milk and cream, bring to a simmer. Cook gently for about 5 minutes while stirring occasionally.

    Remove from heat and stir in the Gorgonzola and half of the Parmesan. Season with salt, pepper, and nutmeg. Toss the drained pasta with a splash of reserved pasta water and serve on plates. Sprinkle the remaining Parmesan over the green pasta with blue cheese.
