Green Papaya and Shrimp Salad

Ingredients

  • 1 green papaya or green (unripe) mango (Asia supermarket)
  • 0.5 Mango
  • 1 small red chili pepper
  • 4 large lettuce leaves (or banana leaves)
  • 2 limes (juice)
  • 1 tsp brown sugar
  • 2 tbsp olive oil
  • 2 tbsp Thai fish sauce
  • 18 cooked shrimp

Instructions

    Peel the papaya, halve it and remove the seeds. Slice the flesh into thin strips. Peel the mango, cut the flesh from the seed downward and slice into strips as well. Wash, trim and chop the chili pepper.

    Mix the chili with lime juice, sugar and olive oil and combine with the papaya strips. Season with fish sauce. Toss the shrimp with the mango strips. Rinse the lettuce leaves and shake dry.

    Arrange the lettuce leaves on plates as a bed and distribute the papaya strips over them. Top with the shrimp mixture and serve.
