Ingredients

  • 200 g red lentils
  • 250 ml vegetable broth
  • 400 g pre-cooked turkey breast fillet
  • 1 tart apple
  • 2 tbsp grape seed oil
  • 2 tbsp Apple cider vinegar
  • Salt
  • Pepper (freshly ground)
  • 250 g mixed greens (Lollo rosso and bionda)

Instructions

    Rinse the lentils under hot water and drain in a sieve. Bring the broth to a boil in a pot, add the lentils, cover and simmer for about 10 minutes until almost all liquid is absorbed; add more if needed.

    Pat the turkey dry, cut into bite-sized pieces, and add to the lentils. Cover and let steam for another 3-4 minutes without further boiling. Wash the apple, quarter it, core it, then slice each quarter into strips. Toss the apple slices with the lentils using the oil, vinegar, salt, and pepper. Remove from heat and allow to cool slightly.

    Wash, trim, and dry the greens; tear them into bite-sized pieces. Plate the greens, top with the turkey-lentil mixture, and serve.
