Ingredients
- 300 g young pea pods
- 150 g fresh spinach
- 2 carrots
- 2 stalks celery
- 1 cm fresh ginger
- 2 tbsp rice vinegar
- 1 tbsp lime juice
- 1 tsp black sesame seeds
- 5 tbsp olive oil
- Salt
- ground pepper
- 0.5 tsp palm sugar

Clean the pea pods, blanch them in boiling salted water for 3-4 minutes until firm, then shock in ice water and drain. Rinse, wash, dry and spin the spinach. Peel the carrots and cut into long thin sticks. Wash, trim and slice the celery into about 5 cm long thin strips.

Peel and finely chop the ginger. For the dressing whisk together vinegar, lime juice, ginger and sesame seeds; gradually beat in oil with a whisk. Season with salt, pepper and palm sugar, then combine with the salad ingredients and let sit briefly before serving on plates or bowls.
