Ingredients

  • 70 g frisée lettuce
  • 70 g Lollo Rosso
  • 70 g arugula
  • 3 ripe pears (e.g., Williams or Conference)
  • 70 g almond slivers
  • 150 g Roquefort
  • 2 tbsp chives rings
  • 4 tbsp Walnut oil
  • 2 tbsp white balsamic vinegar
  • 2 tbsp water
  • 1 tsp white almond butter
  • Salt
  • black pepper (ground)

Instructions

    Wash and dry the salads. Wash the pears, halve them, core, and cut lengthwise into wedges. Toast the almond slivers in a dry pan until golden brown. Crumble or dice the Roquefort. Whisk walnut oil, vinegar, salt, water, almond butter, chives rings, and pepper to make a vinaigrette and adjust seasoning.

    Arrange the leafy salads, pear wedges, and cheese cubes on four plates. Drizzle with the vinaigrette and sprinkle with almond slivers before serving.
